Hash Brown Potato Casserole
Ingredients:
1 (2pound) package frozen hash brown potatoes, thawed
½ cup melted butter (unsalted)
1 can (10.75 ounce) condensed cream of chicken soup (Campbell’s)
1 can (16 ounces) sour cream
½ cup chopped onions
2 cups shredded cheddar cheese
1 teaspoon salt
¼ teaspoon ground black pepper
Topping:
2 cups crushed (medium fine) cornflakes cereal
1/4 cup melted butter
Procedure:
Preheat oven to 350F
Crumble hash browns into small pieces
Add 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, cheddar cheese, salt and pepper
Place mixture in a 13 x 9 inch baking pan
Mix crushed cornflakes and 1/4 cup melted butter
Sprinkle on top of the potato mixture
Bake covered for 50 minutes and uncovered for 10 minutes
